Sweet Pumpkin Soup

Here is an easy and inexpensive soup recipe that works well for liveaboards and cruisers.  You can pair this with a salad that includes protein.

1  large Spanish onion

olive oil

2 large cans pureed pumpkin

3 tbs. sugar (you can substitute splenda)

1 tsp. cinnamon

.5 tsp. cloves

1 tsp. nutmeg

1-2 tbs. cream

Mince the onion and saute in olive oil until translucent.  Add the pumpkin, sugar and spices and cook over medium heat for 20 minutes (do not boil).  Transfer to food processor or blender and process until smooth.  Return to pot and cook for 30 minutes on low heat.  Add the cream and heat over very low heat for 10 more minutes.   You can adjust the ratio of sugar, spice and cream to taste.
