Whole meal salads are great on the boat. They are easy to make and easy to clean up. You can enjoy the sunshine and sunsets without slaving in the galley.
Ingredients:
- Boiled large shrimp (you can cut in half or thirds depending on size)
- Diced orange pepper
- Snow peas or sugar snap peas sliced in bite size pieces
- Baby spinach
- Sliced baby cucumbers
- Steamed broccoli
- Sliced mushrooms
- Toasted sliced almonds
Mix all ingredients with sesame ginger dressing (Marie’s is good). For variations, you can substitute grilled chicken for the shrimp. You can also add steamed string beans and/or mandarin oranges.

Hi there. Do you have a special dressing for the Asian Salad? I love whole meal salads on the boat in the summer!

Du’h just saw the dressing reference. I was thinking of an easy one I can make. As a liveaboard I’m trying to cut down on the bottles of dressings and such.

Any dressing will work with this salad, but then it might not taste Asian.
